Before starting
Slimming World, homemade Chicken Kiev used to be a favourite, but it was packed
full of garlic butter it so obviously wasn’t that great for you. I had a real
craving for this a few weeks ago so set out to find a SW friendly version, this
one appeared to be the easiest and at only 2.5syns each it won’t throw you off
your allowance for the day. Since then I’ve made this quite a few times and it’s
really yummy! It can be a bit fiddly and you do tend to make a mess (I do
anyway!) but it’s really worth it.
I used chicken
breasts from Musclefood for this and they were really good, thick enough to
slice open with no fatty bits to be seen. Much better from the ones you can sometimes
get from the supermarket! I’ve still got

you can get 4 free chicken breasts at the checkout when you spend £25; I’ve
used Musclefood quite a lot and really recommend them! You’ll honestly notice
just a difference with the quality.
You will need:
◦2 x 150g boneless skinless
chicken breasts
◦2 garlic cloves
◦2
tbsp fat free natural fromage frais
◦1 tbsp freshly chopped parsley
◦2
level tbsp plus 2 level tsp grated Parmesan cheese
◦1
small egg, beaten
◦25g
golden breadcrumbs
◦Low calorie cooking spray
And here’s how:
- Preheat the oven to 190°C/170°C Fan/Gas Mark 5. Using a small sharp knife, slice lengthwise down the side of each chicken breast, taking care not to sever the flesh completely, to form a 'pocket'.
- Peel and crush the garlic cloves and mix with the fromage frais, the parsley and 2 tbsp Parmesan cheese. Spoon the mixture into each cavity and press together gently to seal. Secure the cavity by skewering with a cocktail stick and place the chicken breast on a sheet of baking parchment.
- Brush the bottom side of each chicken breast with beaten egg and sprinkle lightly with half the breadcrumbs. Turn over and repeat with more egg and the remaining breadcrumbs. Sprinkle the top lightly with the remaining Parmesan cheese.
- Transfer to a baking sheet and spray with ten applications of low calorie cooking spray. Bake for 25-30 minutes until lightly golden and cooked through.
And there you go! It’s a propa homey meal, especially when added with SW chips and beans, perfect for this time of year.
