This Slimming World curry has been a favourite dish to cook for about a year now and one i do at least once a month. It's so easy to do, super filling and knowing it's nice and healthy makes it taste even better!
- Fry light
- Chicken
- Sweet potatoes
- An onion
- Tomatoes
- Low/reduced fat creme fresh (not sure how many syns this is, you'll need to check!)
- Spinach
- Selection of spices, chills and garlic
The first thing to do is get your pan on a medium heat and add your fry light. Chop your garlic and onion and gently fry. Whilst this is going on, peel and chop your sweet potato in to cubes and add to the mix, same with the chicken.
Once the chicken is mostly cooked add your chopped chills. Next comes the tomatoes and creme fresh, stir all together and you'll get a creamy constancy.
I decided to add a spoonful of each spice, but it's all about preference. We both like quite a hot curry so I did add a fair few for flavour.
This is where you leave it to cook and simmer for a while, i usually leave it for about 40 minutes to make sure everything's all cooked and marinated together. By this point, it'll be smelling absolutely delicious!
About ten minutes before the end you add your spinach and mix it all in. Spinach shrinks down so don't be afraid to stick a good handful in!
And then here you go! You can't really go wrong with this and it's so versatile, you can add and take away other ingredients and turn this curry in to whatever you like!

This looks so good! I recently made a chicken quinoa bake which is syn free, and I made a different sweet potato curry but the addition of chicken in yours sounds so good!

It's soooo jice to find another blogger that also follows SW! I used to cook this curry all the time but haven't for ages so may need to dust it off...my fave SW curry to cook is lamb Rogan josh as its super easy, and recently I've discovered cauliflower cheese soup which is delicious and the easiest soup move ever made!
