After making these pizzas a few a times now, i feel like i finally know what i'm doing! I actually pre make my bases, so i made these yesterday afternoon for last nights dinner. The bases become a little harder so toppings tend to stay in place and don't become too soft, which I've found when bases are still warm. But it's all trial and error and each to their own. One thing is for certain though, these are incredible and ridiculously yummy! 
So if you fancy giving these a go too, then here's how...

For the base, you will need:

  • 1 cauliflower 
  • A sprinkle of Parmesan
  • Mozzarella as your HexA
  • Garlic (i used garlic salt)
  • Oregano 
  • 1 egg 
  • Tomato puree 

The first thing you need to do is pre heat your oven to 200C/410F. Then grate your cauliflower in to a microwaveable bowl. I've found that two full cups makes a reasonable size base. I ended up putting 4 in as i made two pizzas! This can be pretty messy so i put a tea towel down too. When you've finished grating, put a plate over the bowl and place in the microwave for about 5 minutes. 

Once your cauliflower has finished cooking, place it on a dry tea towel to cool down. You'll need to squeeze (really squeeze!) the moisture out afterwards so be careful and make sure it's cooled down enough to do this. I got my baking trays ready whilst i waited, i recommend using grease proof paper with a couple of sprays of fry light to avoid sticking.

Once you've removed all the water, place the cauliflower in a bowl along with your other ingredients. When this is all mixed together place on your grease proof paper and flatten in to a base like shape. Round off the edges too! Pop in the oven for approx 15/20 mins, or until slightly golden brown. I don't fully cook the bases as they'll continue to cook once the toppings are on. 

Now time for the toppings! You can put whatever you like on, but i wanted to make mine relatively healthy. Add the tomato puree to your base and spread across, i added a little more oregano to as well. Don't forget to add your cheeses on top too! Pop in the oven on the same temp as before until all the cheese has melted.  I tend to cook my toppings in a frying pan for a few mins before just to get them started too!

Et voila! These are seriously so good and it's so nice to enjoy a pizza and not worry about eating a million calories. This pizza would be free when using Mozzarella as your HexA and add a couple of syns for Parmesan. I also worked this out to be about 500 cals for the whole thing if you're counting calories! Deffo give these a go, i promise you won't be disappointed! Enjoy!
