RECIPE: PALEO BROWNIES


For the past 2 weeks I've been giving the Paleo diet a nod to see if a low carb diet could benefit me and aide to my weightless. I don't want to jinx it, but so far, so good. In typical me style, my sweet craving gets the better of me in the evenings, it's probably just down to habit but having a little something to look forward to after a gym class is quite nice. I found this recipe online for Paleo brownies and last weekend decided to give it a go.




You will need:

1½ cups grated courgette (I used my Spiralizer which you can get here)
1 cup almond butter, smooth
1/3 cup maple syrup (natural, raw, sugar-free maple syrup)
1 egg
1 tsp vanilla
1 cup dark chocolate chips
2 tbsp cocoa powder

1/2 tsp baking soda
And here's how:
  1. Preheat the oven to 325F/160c.
  2. In a large bowl, whisk together the almond butter, syrup, egg, and vanilla (I used my blender)
  3. Stir in the cocoa powder and baking soda.
  4. Pour the batter into baking dish
  5. Bake for 20-23 minutes, until the brownie is done, but still soft in the middle.
I deiced to use a bigger baking dish than the recommenced 9x9 as I wanted to make thinner pieces and have them more 'bites size'. I'm so pleased with how they turned out and they've been perfect for taking my sweet craving away and they're so chocolatey and yummy!

  1. I always worry when veg is added to sweet recipes it just doesn't seem right (why alter a delicious gooey brownie) but these still look delicious! Think I'll give them a go to see if I can be converted :)
